Why we like them: macarons are the ultimate in fancy desserts – see any Instagram worthy tea party. Not to mention you can make them in any flavour.
Difficulty Level: Difficult – the cookies are quite finicky and it can take awhile to get them just right. You might want to try your first batch on family who’ll forgive you if the cookie top falls or it they’re a little chewy.
Gelato Amount: 1 pint makes about 6 cookies.
Recipe
You can really use any recipe you want and just substitute the filling for gelato we used this recipe for these but! we split the batch in three and added different flavours and colours to have an assortment of macarons.
Take your gelato out of the freezer and let sit out for about 5-10 minutes – you want it to be soft and workable but still frozen.
While your gelato is softening prepare a piping bag for each flavour. You can us a star tip or a round tip it’s completely up to you. Just make sure it’s wide enough for the gelato to pass easily through.
Fill your piping bag with gelato – here you might want to squeeze it a little bit to make sure it’s nice and soft.
Pipe gelato onto one macaron cookie and press the second onto the gelato so that it sticks. PRO TIP – we like to wear a glove or mitten on our piping hand otherwise it gets a little chilly!
Place each cookie in the freezer as soon as it’s done. Once it’s piped the gelato is quite soft and you don’t want it to melt!
Repeat until you’re out of cookies.
To serve take out of the freezer and allow to soften 2-5 minutes before eating.
